Sugar Charred Steak
two teaspoons Kosher salt
two teaspoons fresh ground black pepper
one teaspoon granulated garlic
five tablespoons white sugarmix spices in a bowl
get some nice thick ribeyes (you need the fat) and place them on a platter
generously cover the top of the steaks with the spice mixture and gently pat it with your hand (wash your hands first) and allow the steaks to sit on the counter for 45 minutes to an hour at room temperature
after they have rested for that time flip them over and repeat on the other side
while side two is resting, light your grill if using charcoal (this works best)
after side two has rested for 45 minutes to an hour, put the steaks on the grill directly over the coals
do not worry about the flame up - this is what you want and the more the better
cook them to desired doneness, let rest for a few minutes and serve
I have done this more times than I can count, and I have given this recipe out countless times - everyone loves it, and my kids request it constantly.
