I like to prepare as much as possible on Thursday and Friday. The only food work that I want to do on Saturday is cooking (or grilling) and setting things out. Salads - including dishes such as chicken salad, turkey salad, and potato salad - are already done and ready to serve as are cut up vegetables - with homemade dip - and deviled eggs. (BTW, I have a chicken salad recipie that is probably the only food my family has ever argued over.)
Menus depend on game time. If it is a late morning or early afternoon kickoff, we have a breakfast casserole sometime that morning and have the main meal after the game. (The casserole is also assembled Thursday or Friday.)
I must confess that I just bought a new portable grill just for tailgating and can't wait to slap some red meat on it!
