In my quest to get back into shape, I quit smoking 5 weeks ago. I bought a set of kettlebells 3 weeks ago, and this past week I bought a weight bench and a 300lb Olympic weight set. This morning I got up at 5am, and did 6 sets of barbell squats and 6 sets of Romanian Deadlifts. This is the first time I have done either in about 15 years. I am now fully realizing why I always hated leg day, and am thinking that smoking and being out of shape wasn't so bad after all...lol
I go till my butt touches my calves.
I would suggest overhead squats as well.

You should prepare yourself to live with the consequences of your decisions, whatever they may be.
I probably will after this first cycle. I did those with my kettlebells before I got my barbell. They were tough, even with a couple 20kg kettlebells.

Ok, assuming that you actually do have that kind of flexibility...I have a question. Why do you hate your knees?
You haven't done squats in 15 years, and you are squatting...with load...until your butt touches your calves? This is a very, very bad idea.
Note the photos below...one is a good idea. One will have require you to have knee surgery very soon.

Ditto that! You need to be very careful....don't injury yourself and then you can't do squats for (insert time) whether you want to or not. Your doing great! Go get a couple of professional personal training sessions so you know exactly what to do or buy a good training book.
Am I sounding like a know it all? Sorry, just got over foot surgery and was in the middle of getting myself back in shape when that happened. It is infuriating to have made inroads and then have to start all over again.

That first photo is a great picture on a proper squat. I did squats for years with bad form (placing bar across top of neck, improper feet placement, etc) and blew my knee out a few years back. I was very hesitant to get back into it because I could still feel a little pain in the knee, but when I really focused on learning the proper form, everything felt so much better and the amount I could do shot up. Form is the key.
